Controversy: Relax, Its Just Permaculture

The word “permaculture” rears up like a mighty monolith: imposing, enigmatic, encoded with a message that will change the world, if we can just decode it and get our heads around it…

My own struggle to define permaculture amuses me, really, because some of the inherent joy in this wonderfully empowering design philosophy/practice is in ceasing to struggle. When we slow down and begin to really observe and understand how the natural systems around us are functioning, we begin to see how we can just fit ourselves into those existing ecological processes with minor adjustments to them and us.

I’m a concrete thinker who appreciates material examples more than intellectual constructs. So, a small example:

The Ithaca Children’s Garden was fighting a perennial flooded soggy place in the lawn where the sloped parking lot channeled water into the grass. What to do? Fill it with gravel? Add dirt, level it and seed with grass? Build a dam or install curbing? Dig a drainage system? All solutions that involved expense,  long term maintenance, and commitment to an extended struggle.

Instead, their permaculture perspective suggested digging out a little more, planting bog-loving plants at the edges, building a little boardwalk, and, Voila! A mini-wetland that attract dragonflies, birds, frogs -and children- in droves. As usual, the problem WAS the solution.

On my property, I use all of my autumn leaves as mulch and fertilizer. (Rather than blowing, raking, bagging and hauling, then purchasing commercial fertilizer and mulch.) Dandelions, purslane, violets and other “weeds” are groundcover, bee forage, butterfly hostplants, food and medicine for me, and green manure for the compost. (I could drive myself nuts digging them out or killing them with toxic herbicides, I guess.)These are small-scale adjustments, not permaculture design on a grand scale. But practices like these keep me in the right frame of mind: observing, appreciating and working with the incredible systems of abundance that surround us.

Controversy–The Grumpy (Permaculture) Gardener

I come by my grumpiness honestly – I am the child of grumps . . .and they came by it honestly too. But I mostly blame my dad. Both my parents were young adults at the start of the Great Depression: she was 19, attending Flora Stone Mather; he was 22, going to Antioch College on the work-study program… in the course of which he became an English major, worked on a Great Lakes ore boat, taught at a progressive school in Michigan, and learned architectural drafting (which turned out to be far more marketable than English over the long haul). Somewhere in all that he was exposed to the agricultural writings of Louis Bromfield, which inspired a dream of having land of his own on which to develop a self-sufficient place.  The dream did not die. After my parents met and married my mother’s father sold them the 40 acres he had bought in Twinsburg to run his hunting spaniels.  They moved there in 1944 to begin their great adventure — in rather primitive circumstances. I was 20 months old.

Of course, at that age I can’t remember being saved from falling off the hay-wagon and almost being run over by a tire. I only vaguely remember being chased by the geese (a year later). But I do happily remember family excursions through the fields to the woods, ledges, and forest; the beauty of bloodroot and hundreds of trillium in the spring wood; the scent of black walnuts in their pulpy cases; the juice of peaches fresh off the trees, warmed by the summer sun.   

What I missed as a young child was an awareness of the hardship and hard work — that the cow had to be milked every day; that butchering a rabbit took a toll; that half an acre of garden meant hours of weeding (which included me…and I didn’t like it!); that fields had to be tilled, planted and harvested; vegetables and fruit processed and canned; and that despite all that, we really couldn’t live self-sufficiently on 40 acres. My father took a job as a draftsman (and modeled tractors!). Piece by piece the dream began to fall away… first the rabbits; then the geese; then the cow; until, by the time I was 7 or 8 the chickens, the orchard, and the garden were all that was left, and much reduced in size. There wasn’t much canning going on. My mother also took a job (law degrees help). Piece by piece, I became aware.

But there was always a garden up until the year my father, in his seventies, broke his hip.

So I come to permaculture with not the enthusiasm of the idealist and convert, but with suspicion and grumpy pessimism. I know that, unlike a building, something created of nature is not static. In permaculture the model of a food forest that is used is that of a young forest/meadow intermix. But I know forests do not stay young. They grow and change and as they do so, they change the environment of everything around them. And what then, I ask?  So I am skeptical that there is such a thing as ‘permanent agriculture’ (and at any rate, I think, it is definitely for someone younger than I am).

That is not to say I do not see value in permaculture. There is much I value. In particular I value what permaculture has to say about soil, soil structure, soil organisms, how soil functions, and how important it is to have healthy, living soil, because that is the one thing on which everything else depends. ThIs knowledge informs a deeper understanding that I incorporate into my landscape design practice today.

Permaculture Controvery–Tom’s Reply to Elsa

I hear and respect Elsa’s pain.  And I empathize further with anyone unconvinced by permaculture founder Bill Mollison’s rather blithe definition of the term as “working with the processes of nature to grow the most food with the least amount of effort” and his frequent invocations of “hammock time.” (Ha!)

But I think there’s also danger in conflating permaculture with organic gardening.  “”Permaculture is always “organic”, but “organic” is not always “permaculture.” And, done correctly, permaculture can bring greater yields with less effort. Moreover, as I’ll try to demonstrate  in a bit, the last 15 years have brought fresh thinking on how to increase the yield/effort ratio.  (Kind of amazing if we contemplate all the millennia humans have focused on this very problem!)

First, some essentials on how permaculture increases yield per sq./ft:

● Planting perennials instead of annuals. This eliminates the standard practice of tilling, among other things, and builds soil rather than degrading it.

● Filling available ecological niches with companion plantings of different height, root size, fruiting times.  This eliminates significant weeding and often–say, if one companion plant is a nitrogen fixer–strengthens companion plants.

● Slowing water flows via swales, fairly heavy mulch and other methods. Making water available to plants longer means less watering.

There are others (many of which we’ve seen work in practice), but you should get the idea. 

Second, here’s some of that “fresh thinking” that may or may not fit any formal definition of permaculture, but certainly complements it.

● Nutrient balance.  We’re learning just how important to plant health it is to have full nutrient balance, and it’s having a dramatic effect on yields.  One of the leaders in this thinking is an Amish wunderkind from near-by Middlebury. ● Biochar.  Biochar is wood cooked in the absence of oxygen (like any charcoal, but without the petroleum additives), but used for growing plants instead of cooking them.  It seems to be especially good at restoring highly depleted soil–just as it did for the pre-Columbian dwellers along the Amazon who used it to create rich, productive food forests.  Starting with anthropological studies of this version of biochar called terra preta, it has become one of the hottest topics in soil science, as well. http://www.cornell.edu/video/johannes-lehmann-finds-key-to-new-energy-soil-fertility-in-biochar

● System of Rice Intensification. It turns out that rice actually grows more productively when it isn’t flooded!  (Think of all those geography book pictures of water-filled rice paddies and farmers working their water buffalo!) Instead, farmers in India and elsewhere have been quadrupling yields simply by coming up with a different routine. http://www.theguardian.com/global-development/2014/may/13/miracle-grow-indian-rice-farmer-sri-system-rice-intensification-record-crop.

In short, conventional organic horticulture/agriculture is undergoing a dizzying rethinking. A lot of that is already feeding into permaculture.

Besides, permaculture has also broadened significantly since Bill Mollison’s early definition.  The concept now fully embraces such concepts as energy (solar power, rocket stoves), water (cisterns, gray water, leaky tile), and, especially, community.

When I look at the neighborhood in these videos, I also see Cleveland. We’ve got the same naked roofs waiting for solar power, the same gutters waiting to be fed into cisterns and leaky tiles, the same barren lawns just waiting for low-maintenance food production.  And, not least, we likely suffer from the same frequent human isolation—–isolation that is waiting for a chance to escape into the embrace of real human   community.  We could do what Rob Avis and his wife have done in just a few years and have the same energy, water, and food independence–with modest long term cost and effort.

Take Two: Diana Sette asks, “What is Permaculture, Anyway?”

What is “permaculture,” anyway? Maybe you hear people talking about it all the time, and still have no idea what it is. Maybe someone loosely recommended to you that you check it out, because it might interest you. Maybe picking up this magazine is the first time you are seeing the word. Whatever brought you to this point, I can assure you that there is something in permaculture for you. I can also assure you that even for many permaculture practitioners, it can be challenging to pin down in a quick ‘elevator speech’ what exactly permaculture is. Some say it’s a movement; some say it’s a collection of growing methods; some say it’s philosophy. In this article, we will focus on permaculture as a design system. During my Permaculture Teacher training course, our teachers challenged us to take five minutes to come up with a definition for permaculture. Some people came up with it quickly—some needed more time.

Overall, the variety of definitions painted a colorful array of nuances and subtleties. Hopefully, this article will leave you with a clearer sense of what is permaculture, with ways in which you may be able to take the next steps on your journey.

Beginnings

First, let me break the word “permaculture” down for you. “Perma:” short for “permanent.” “Culture:” short for “agriculture” and also “culture.” So you can think of “permaculture” as simply “permanent agriculture” and “permanent culture.” We don’t mean “permanent” in the sense of unchanging, but rather in the sense of a deep sustainability. The term was coined and popularized in the mid-70s by two Australian ecologists, Bill Mollison (1) and his young student, David Holmgren (2). “Permaculture” is now a term understood on a global scale.

Contrary to what our digitized and mechanized culture may present at times, humans rely on the land. Our ability to survive rests wholly on plants’ ability to capture the sun’s energy and translate it into a form useable to us through photosynthesis. From the land, we create our food, shelter, water, and clothing—and also our culture. Traditionally, human cultures centered on the seasonal rhythms and cycles of the earth. Observing that the world has grown alienated and disconnected from our intimate relationship with the earth, permaculture looks to re-center our systems (be it food, economic, political, etc.) in the flow of energy and the cycles of nature.

As we face extreme global catastrophes—climate change, war, and hunger, among others—we can see that if human societies do not change course, we will perish, and the earth will continue to adapt and go on without us. Therefore, the more we work with the earth, learn from her natural cycles, and model human systems on ecological models of adaptability and resiliency, we can better weather the storm to create a permanent and resilient culture. Permaculture proposes this approach.

More than fancy gardening

Permaculture is a holistic, ecological design system that can be applied to everything from urban planning to rural land design, from economic systems to social structures, and everything in between. It is not only one set of practices, or a philosophy—it is a way of integrated thinking, using a set of design principles to work with nature’s energy. This ecological perspective sees the world as a complex web, rather than as a complicated series of segregated events or discrete elements. The design system can produce a paradigm shift that may be comforting and inspiring to those who feel as if they are constantly putting energy into a system (whether it’s their home garden, farm, political, social, or economic work) that never seems to change or offer much of a yield as compared to the input. Permaculture is a way of designing the world we want that cares for the earth and people so that all needs are met in an equitable way. Permaculture design is abundant systems thinking, and prevents the constant banging of one’s head against the wall when faced with supposed constant scarcity. Because the point is that by working with rather than working against natural forces, one can minimize inputs and harvest maximum outputs. It’s a simple idea at first glance. Yet, it is an integrated system with many facets—anything can be viewed through a permaculture design lens.

The Permaculture Design Course (PDC)

As an integrated design system, permaculture incorporates numerous disciplines of study and practice. These disciplines are presented in a PDC resulting in a certification as a Permaculture Designer (3). Because of the numerous systems in which these design principles can be applied, the PDC covers a sort of introductory buffet to design topics that emphasize the core ethics: Earth Care, People Care, and Fair Share.

Each PDC covers Introduction to Permaculture Ethics, Meta-systems, Permaculture Principles, Pattern Language, Design Methods (site analysis and observation, zones, and sectors), Natural Systems, Climate & Biogeography, Ecosystems & Ecology, Earthworks/land forms, Water, Soils (microbiology, remediation, regenerative practices, compost, carbon sequestration), Forest (tree and mushroom cultivation), Arid & Tropical Regions, Cultivated Systems, Home Systems (root cellars, medicinal herbs), Microclimates, Building Design (natural building, energy efficiency), Greenhouses, Forest Gardening, Aquaculture, Agroforestry (alleycropping, forest farming, riparian buffers, silvopasture, windbreaks), Seed-saving, Waste Treatment (grey and blackwater, humanure),

Energy, Appropriate Technology & Tools, Livestock (pasture management, holistic animal care), Social Systems, Urban/Rural/Suburban Ecologies, Community Design, Economics (local, slow, and regenerative), Invisible Structures (governance structures, personal patterns), Broadscale Farming & Land Use (keyline design, land trusts), and Ecological Restoration & Wildlife.

The standard PDC is an intensive 72-hour course, sometimes split into two separate weeks or several weekends. Various teachers emphasize different subjects, but all PDCs should touch on all the above.

Considering that any one of these topics warrants a life study (!), there are numerous entry points to design resilient systems. A PDC is a way to step outside your daily life and take a fresh look at an expansive array of topics. Permaculture marries indigenous ways of knowing with regenerative agriculture, modern green infrastructure, and progressive socio-politico-economic structures.

Permaculture is a process of looking at the whole, seeing what the connections are between the different parts, and assessing how those connections can be changed (4) so that relationships function more harmoniously.

But where to start?

My advice to someone just dipping their toes into the permaculture ocean? Get a lay of the land, observe what themes and topics attract you, and then walk toward them. Don’t try and figure it all out at once. Start small and build on your successes. Ask lots of open-ended questions and listen with curiosity. A few tips…

1. Get rooted in permaculture principles and ethics. David Holmgren presented the 12 Design Principles as the petals of a cyclical flower (5).

These guiding principles can be adapted to any systems thinking. Ethics are core, as People Care may seem simple, yet lead us into a deeper journey of unlearning and teaching ourselves new communication patterns and listening skills—or rethinking urban planning to be centered on the real needs of human beings. This is perhaps the area that continues to expand the most and require the most experimentation and feedback, as every city, town, neighborhood, street, house, and bedroom has its own social microclimate, and healthy social ecosystem models and patterns are myriad (6). Earth Care has perhaps gained the most attention and focus, at times creating the misconception that permaculture is just a set of practices, rather than a way of approaching a problem. Nevertheless, permaculture has a lot to offer in food growing and land stewardship. Finally, Fair Share is the third essential piece of permaculture, teaching us to be aware of the existing yield in front of us and to know when we have enough, but also to act ethically to distribute surplus resources when our ‘cup runneth over.’

2. Attend a PDC, read everything you can about permaculture, listen to podcasts, and visit working permaculture sites. A PDC can be like a trip down a rabbit hole that leaves the sojourner wanting more at the end. It is one of the best ways to get significant exposure to what’s possible with permaculture. Studying permaculture through reading (7) will help you gain more clarity to know where you want to dive in more deeply. For many people, simply spending time in a place that is a thriving permaculture model leads to tremendous shifts.

3. Find what interests you most and work from your niche. Evaluate your strengths. What existing assets and resources are already present? Use that as your starting point. What interests you? How do those interests overlap with the needs of your community? From there, take the smallest steps possible to make the biggest impact on existing systems. Maybe that means meeting your neighbors, planting perennial onions, saving seeds to plant out the next year, collecting rainwater off your roof, getting involved with or starting a food cooperative, building a humanure composting system on your property, or simply recording patterns where you are working for a year or more. Whatever your entry point, make sure to take a step back and observe the social, biological, and economic ecosystems and listen for feedback before taking the next actions. That is our civic duty as residents and stewards of this earth and of our communities: listen and accept feedback.

4. Finally, walk the walk, and work to establish good working demonstration sites. Starting with one or two systems that are manageable is wise so that you don’t become overwhelmed. In modern society, we have grown quite ignorant of energy systems, and by creating these working systems that demonstrate that there is no free lunch in ecological systems—something always comes from somewhere, and waste is food for something else—we can demonstrate a new paradigm in action (8). Share replicable systems with those who are interested, and focus your energy on creating a world we want, rather than being drained by fighting against systems that are broken. As Buckminster Fuller puts it, “you never change things by fighting the existing reality. To change something, build a new model that makes the existing model obsolete.”

As one of my permaculture teachers, Peter Bane, tossed out in a PDC class one day while reflecting on ancient Viking culture, “it’s better to adapt than die.” I will add to that: better than not dying is thriving! And I think permaculture design principles and ethics present a way to rethink our current social, political, economic, and agricultural systems with new eyes embracing the transformation to thriving whole communities of abundance. ∆

So, What the Bleep is Permaculture?

What better time than January to ask that age-old question:  What is permaculture?  Actually, we trained permaculturists wrestle with the concept ourselves. Partly that’s because we don’t really like the word “permaculture”—which seems clunky and ideological– but we still use it because the rest of world (that is, the narrow part of it that more-or-less understands the term) has made the word part of standard usage. Partly that’s because the question reminds us of too many party-stopping conversations that go on for 10, 20, 30 minutes and get increasingly down in the weeds.  And partly that’s because everyone seems to have his or her own–albeit overlapping–take on the concept.

But, in the end, permaculture is a concept worth wrestling with. Few things once grasped, in our experience, seem to generate such enthusiasm. Many of our students, including quite experienced gardeners, call their exposure to permaculture and its possibilities “life-changing.” It is, in fact, a different take not just on gardening, but on life.  That is perhaps best illustrated by David Holmgren, one of the co-founders of permaculture, in his flower of interconnectedness:

Four Permaculture Insights From a Soil Fertility Course

What can a permaculturist learn from a Soil Fertility course at Ohio State—one taught mainly for future corn and soybean farmers? A surprising amount, actually.  Here are a few learning highlights.

● Nitrogen is fickle; only 15% of the nitrogen in good organic soil is typically available to plants, but those nitrogen compounds are also prone to moving through the soil,  washing away or disappearing into the atmosphere as gas.  Permaculturists can take advantage of this mobility by establishing nitrogen-fixing plants like sea buckthorn

sea buckthornthroughout their plots. Nearby plants can then access a steady flow of fresh ammonium or nitrate–their favorite nitrogen sources. 

But artificial nitrogen applied during conventional farming is way too mobile—especially for farmers who prefer to fertilize in the fall when it’s most convenient. By the time corn really needs nitrogen compounds for its July growth spurt, most of that nitrogen is usually long gone–often off polluting rivers and lakes.

● Phosphorous is stubborn; it only makes itself available to plants when it “feels” like it.  Usually it forms strong bonds to minerals like aluminum and calcium and only chooses to disassociate itself at just the right pH (around 6.2) and with the help of lots of organic matter. Even then, it may hold back. Phosphorous-rich plots may not allow plants to access this essential element because the soil doesn’t hold enough (surprise!) zinc. As one of our guest lecturers said, getting nutrients to interact productively can become as complicated as any subject in science.

Major storms, which global warming has multiplied dramatically in Ohio over the past 30 years, have exposed a special difficulty with artificial phosphorous fertilizers: The few percentage points of phosphorous that are soluble have increasingly become Ohio’s major nutrient source for toxic algae bloom.

● Adding gypsum (calcium sulfate) can be an effective way to increase the calcium content of soil without raising pH. This has special relevance for my small pawpaw orchard since calcium helps fruit trees hold on to baby fruitlets. (My five trees, which formed 200 emerging pawpaws last spring, ultimately lost all but four!) Moreover, since pawpaws prefer acidic soils in the 5.5-6.5 pH range, gypsum offers a preferable alternative to lime (calcium carbonate), which tends to raise pH.  Finally–and of great interest to NE Ohio gardeners–gypsum penetrates hard clay soils, especially when applied regularly over several years. The dissolved sulfate half of the gypsum molecule forms a mild solution of sulfuric acid that cuts a path into the clay through which the calcium can pass.  Calcium then helps the clay form those lovely soil aggregates that gardeners dream about.structure_photo2

● Leaves give out color clues about what minerals they’re missing.  Phosphorous-deficient leaves turn purple, for example,

These signs never offer the final word, which should come in the form of a formal soil test.  But several of my honeyberry bushes turned purple (phosphorous?) last summer and five of my young salal bushes turned brown around the edges (potassium?) several weeks before their sad, dusty end.  I was able to restore one to green, expanding glory

I learned a lot more, but, of course, the Soil Fertility class wasn’t about permaculture. In fact, it only just barely touched on permaculture’s broad-acre cousin: agro-ecological farming–the type of farming that is represented by the Ohio Ecological Farm & Food Association (http://www.oeffa.org/).

Instead, it gave me a snapshot of Big Ag’s best thinking at a moment of major ecological and political change. Big Ag’s assumptions of ever more artificial fertilizer for ever more productivity, of course, face increasing skepticism.  Big Ag’s response seems to fall somewhere on the continuum of Kubler-Ross’s famous stages of grief–maybe between “denial” and “bargaining.” Too many fossil-fuel-based fertilizers and pesticides? Big Ag’s solution to carbon loss, climate change and pollution is more of the same:  top-down and big bucks.

Take the problem of inefficiently applied nitrogen. Why not perform remote sensing of nutrients from the air?

remote sensing of fertilityOr better yet why not develop a machine that will sense nutrient needs as it passes with sufficient height through a field of already growing corn and then apply just the right amount of fertilizer on the spot?

Machines like these, of course, cost tens of thousands of dollars and are likely only affordable for farmers growing monoculture crops across broad acreage.

And that was another major takeaway from the course: Big monoculture farming is getting bigger yet.  Over half of Ohio agricultural land is now farmed, not by its owners. but by renters. These renters farm as much land as their equipment will let them. Moreover, they have little incentive to improve the land and its capacity for carbon retention. Next season, after all, they may well be working someone else’s land.

Yet even in Big Ag, the trends point in multiple directions. Those farmers who still work land they do own are showing rising interest in planting cover crops. These, of course, improve fertility and raise soil carbon content naturally. clover3They augur well for the long-term soil health of the land.  My professor says he’s never received more inquiries about which cover crops to plant when.

So what’s the outlook for our state’s agriculture?  Muddy, just like Ohio fields after all our burgeoning high-volume thunder storms.

Reflections on Ben Falk’s Northeast Ohio Tour, October 21-24, 2015

Foamy, muddy water gallops over a waterfall after a severe storm in Vermont. Ben Falk then switches the camera to a quiet trickle of clear water leaving the low point on his property, same storm. Obviously, Ben’s plantings do a vastly better job of retaining water and soil than his neighbor’s.  I knew academically this could be done, but too few people have tried, succeeded and documented it well. When asked during a moderated discussion why he wrote his new award-winning book, The Resilient Farm and Homestead , that is the reason he gave. “We need more people trying things and sharing the results. There’s too much theory in Permaculture.”

Ben Falk is a young Vermont-based designer, farmer, homesteader. After I participated in a permaculture design certification course at his farm in 2013, I was eager to bring Ben to Ohio to share his expertise and vision. Earlier this fall, he completed an action-filled four day tour of northeast Ohio in October.

Ben’s tour featured two public events: University of Akron Field Station in Bath hosted a Forum for Farmers and Designers for 20 guests, and The First Unitarian Church of Cleveland in Shaker Heights hosted a public lecture, attended by over 150 guests.

The tour also included site consults with six farms: Kelly’s Working Well Farm in Chagrin Falls; Light Footsteps Farm in Chardon; Spice Acres Farm at the Countryside Conservancy in Brecksville; Thorn Valley Farm in Newbury; Hershey Montessori “Farm School” in Huntsburg Township; and Terra Firma Farm in Walton Hills.

At all six farms water management, without exception, was among the proprietors’ highest priorities.  They also had questions about non-native plants and site design. Here are some of Ben’s thoughts, many of which apply to gardens as well as farms:

Water management strategies

Slow it, sink it, spread it – basic permaculture tenet

Keep it on the surface: if confined in a culvert, water will pick up speed and become a more damaging force

To slow water, build a series of check dams.

Repeated check dams built with overflows on alternating sides will cause high volumes of water to meander more slowly. Dams can be planted with woody or herbaceous perennials, creating chinampas – one of the most productive agricultural configurations in human history. Depending on scale, one can use apple trees, blueberries or herbaceous perennials (think rain garden species)

Along streambeds, ensure water has access to flood plain as much as possible. Steep and deep banks speed water flow and increase erosion.

When choosing a pond site,

Consult a topographic map to calculate the volume of rainwater it will be catching, based on the surrounding slopes

Consider respective elevation, ideally at highest point or at least higher than the area to be irrigated.

Consider proximity to zones of use – easy access for irrigation, livestock watering, human use

Consider placement relative to livestock: not directly downhill from point source of manure. If this is unavoidable, use swales to direct water flow across slope and away from pond.

Pond volume should corresponds appropriately to amount of annual water drainage for the selected pond site

Edges should be planted with wetland species like rushes and cattails, which oxygenate the water. Even a shallow pond with low flow-through can have healthy, clear water with the right balance of wetland plants.

Perennial plants on pond banks should not be mown close to water edge as they provide shade and cover for amphibians as well as helping stabilize the banks. Margin can be mown in a scalloped pattern to increase “edge” and provide easier water access for small animals.

Shade is essential for a healthy pond and aquatic life.

Trees can provide shade but must not be planted on the pond berm.

Tall perennial plants are a good choice  – some prairie plants grow to six or more feet. 

Floating islands of plantings require some maintenance and should be removed in winter, but are attractive and can shade areas far from the shore.

Docks provide shade and protected habitat as well as human interface to pond environment.

Non-native plants

Vermont does not face the same challenges with opportunistic non-native plants, but one strategy Ben suggested is to provide competition in areas that are overgrown with unwanted, aggressive plants. Among the unwanted plants, add vigorous pioneer plants that provide desired yields such as black locust, autumn olive and Jerusalem artichoke. About which plant Ben quipped “If you can have only two tools for survival, choose Jerusalem artichokes and a .22.”

Zone 1 – This Permaculture concept describes the area you visit every day, sometimes often, such as your doorway and the walk to the car/garage or barn/animal care.

Zone one must have good sunlight, ideally south aspect

Best location for growing food, culinary herbs

High maintenance growing should be in zone one since it’s easy to weed, water, watch for disease

Scale of permanence – site plan revolves around permanent features such as buildings, roads, contours of the land.

Place them carefully if you have a choice

Roads should be sited to provide access to all parts of property

Better for roads not to bisect open areas such as pasture

Expensive fence should be saved for property perimeter. Livestock can be contained with inexpensive, moveable electronet for mob grazing

Trees are not permanent. Even big trees, if they are placed badly and/or don’t provide a yield that you value (beauty, shade, food), should be removed

In some cases a building can and should be moved or changed in significant ways

Keep your perspective flexible – mindset should not be high on the scale of permanence!

Beauty as a yield – Ben reminds clients that beauty is a legitimate yield of a system. Indeed, Ben’s cultivation of beauty is one of the things that makes the experiences of reading his book and visiting his homestead so enjoyable.

Looking at a pond is beautiful. Looking at it through a screen of fruit trees is even more beautiful.

Plant walkway edges with a wide array of herbaceous perennials. They can be knocked down for snow removal and provide food and habitat for insects and birds. Coordinate with others to buy plugs in flats at wholesale prices. Many have medicinal properties as well (e.g. monarda, calendula).

Though mundane, it is worth considering, Ben reminds us, that all projects potentially impact property values. Consider aesthetics when planning significant work.

Ben was struck by the variety and quantity of nut trees in Ohio. We were delighted to discover that one farm had a mature chestnut tree that was bearing heavily.

He especially admired the hickory trees, which are scarce in Vermont. Interestingly, deer are also scarce in Vermont, compared to our population. He recently received a grant to provide for significant fencing in support of a grazing operation on one of his farms. He suggested concerned farmers in Ohio could seek funding for deer fencing.

The most coveted role in Ben’s entourage seems to me to be that of host and chauffeur. I was honored to attend all consults and events as well as provide room and board. Ben is a wise, patient, down-to-earth guy. His tour was an unparalleled learning opportunity and inspires me to start right away planning another guest for next year!

Goji Berries for What?

Now that I’m getting bumper crops of goji berries, I’ve got to figure out how to eat them and all their reputed antioxidants.  Ingested by themselves, nobody I’ve met seems to like them much.  Neither do the birds, bugs, and deer.  The brilliant red-orange berries–presumably visible to most critters–kept emerging all fall and remained virtually untouched .

The goji berry’s mild bittersweet taste does make a nice, but understated contrast as an addition to an apple/orange salad.  But the sheer volume of my harvest this fall necessitates a search for more variety.

A web search has turned up a winner. My wife and I would give

the recipe below between a B+ and an A-. And the dressing

would work well on all kinds of salads:

Ingredients

Salad

1 heaped cup red cabbage, shredded

1 medium beetroot, grated

2 carrots, grated

Corn cut from 1 corn cob

1 spring onion, cut on the diagonal, white part only

To garnish: Chopped coriander (cilantro) and a sprinkle of goji berries

Goji Dressing

¾ cup goji berries

4 tablespoons apple cider vinegar

1 tablespoon ginger, peeled and chopped

1½ tablespoons white miso

1 tablespoon tahini

Pinch of salt

Grind or two of black pepper

Instructions

Salad

Put the cabbage, beetroot, carrots and corn in a bowl and sprinkle over the onion, gently mix, and garnish with coriander and goji. Set aside while you prepare the dressing

Goji Dressing

Place goji berries into a glass or mug, and cover them, only just, with filtered water. Let them to soak for up to half an hour till nice and soft, keep the water – don’t throw it out

Blend all ingredients with the goji and their soak water till you’ve reached a nice consistency, then pour liberally over the rainbow salad and serve.

One Caveat: The recipe above is clearly meant for dried goji berries, not fresh.

Here’s what my fresh ones looked like:

At 3/4 of a cup, this quantity of goji berries is at least equal to--and maybe more than--the tiny Whole Foods packets of dried berries which sell for $17 apiece.

The end result is as tasty as it is colorful:

–Permaculture Recipe– Red Currant Pie

Currants–red, black, pink, etc.–are something of a mystery to Americans.  Faced with a bush brimming with ripe berries, even Americans with broader-than-average taste palettes will look, admire….and then walk right by. That was my experience this last summer, at least, in a community garden with eight or so free-to-member bushes. I’d pick several pounds of bright red berries, wait an interval of several days for others to take their turn, and the bushes would remain almost as full as before. Why the lack of interest?

For the perennial/permaculture gardener that is no idle question.  For currants happen to be easy to grow, fruit prolifically in both shade and sun, and are virtually immune to deer pressure. And they’re a staple of European cuisine–from the UK through to Russia. So what’s the problem?

First, they’re sour. You can’t just pick and eat.  So that means, second, that they require processing. Europeans juice them and serve with breakfast. If that’s too bracing, one could mix them into smoothies with blander fruit like bananas or pawpaws. My wife and I used the latter, and the results are tasty.

Third, Americans don’t have a tradition of cooking with them, so we don’t have much choice of currant recipes for more complicated cooking.

Through the miracle of the Internet, however, those recipes are now at our fingertips. But–and this is the fourth barrier–those recipes are often in a foreign language. That creates a real mental barrier, to be sure, but one that can be easily surmounted with a fool-proof search strategy and a simple right click.

Here’s a take-home-exercise–the first, I believe, in Gardenopolis Cleveland history. First, pick an ingredient, in this case “red currants” and the word “recipe” and then “translation” and the European language of your choice. Second, inspect the foreign language recipes and their pictures. Click on one you think might be interesting and then right click for an instant translation into English.

Here’s an example. Having followed step one for German, we get “Rote Johannisbeeren” and “Rezept”. After inspecting our many choices, we click on the following link: http://www.chefkoch.de/rezepte/1410421245910330/Rote-Gruetze.html. Now right click and then click on “Translate into English.” Voila! A delicious, yet simple, way to serve both red and black currants.

Finally, here’s link to a recipe (in English!) for red currant pie that we have made several times and that has proven a big hit with company. http://allrecipes.com/recipe/18480/red-currant-pie/. The lemon in the crust plays nicely off the red currants in the filling. My wife advises that, if you have too much difficulty rolling out the sticky dough, just add a little more flour and “pat” (rather than “roll”) the dough into place. The only other change to the recipe my wife makes is to drizzle the top with melted semi-sweet chocolate.  Without that, the resulting pink filling looks too much to us like Pepto Bismol.

      

Fast Food Permaculture?

A very busy, single career woman friend of mine is planning her permaculture garden. What, she asked me, could she plant that would be really easy to harvest and eat?

She’s a yogurt-for-breakfast kind of person, so my first thought was berries.  Raspberries are easy to harvest and freeze, and only require a bit of care in the early fall disposing of spent canes and trimming new ones to encourage multiple fruiting stems.

Red and black currants are others that require even less work and could be sweetened with honey to eat with that yogurt.

She also eats a lot of greens.  So I suggested Turkish rocket, a perennial that also requires minimal care.  In early June, its buds form broccolis that can be harvested multiple times, and its leaves are also good in stir fries.

A second would be lovage. (She reads this blog and liked the possibility of lovage in pasta. See link: http://www.gardenopoliscleveland.org/2015/10/recipe-corner-lovage-pasta/).

Some easy-to-grow annuals would include swiss chard and kale.

A quasi-ground cover for her sunny location would be yarrow, whose young feathery leaves are good in salads and whose flowers can, depending on the cultivar, bloom a variety of colors.

My co-editor Ann McCulloh suggests June-bearing strawberries, as well as peppermint, spearmint, lemon balm, violets (flowers and leaves),

and daylilies. The buds of the latter are excellent in stir fries.

Then there are the perennial stand-bys, asparagus and rhubarb.  Once planted, they grow for 20+ years.

Walking onions are also a good one-to-one substitute for scallions, with the advantage that they come up first thing in the spring, even as the snow is melting, and are available to eat through November. In August, they form seed bulbs at their tops, lean over and plant themselves–thus the name “walking” onion. Once again, little or no care required and constant warm weather availability.

Finally, no permaculture garden would be complete without at least one “dynamic accumulator” (or fertilizer plant) and one nitrogen fixer. For the former, I’d pick sterile Russian comfrey, the one non-edible in this group. It simply does too good a job of building soil to ignore–and is attractive.

For the latter, I’d pick sea buckthorn, whose berries make a great, high-antioxidant juice. The plant is dioecious, which means that you must separately plant both one male and up to seven females  to get fruit.

How’s that, my friend? This would be a combination of fruits and vegetables that practically serve themselves!
